SLY EYE

An Espresso Martini with a SLY twist. Think a classic on steroids with the Guinness syrup and SLY DOG Spiced Rum bite. Take a sip and see for yourself.

Ingredients

35ml SLY DOG Spiced Rum

20ml Coffee Liqueur

15ml Guinness Syrup (or to taste)

Double Espresso

3 Dashes Tonka & Chocolate Bitters

Method

For the Guinness Syrup:

1. Reduce Guinness by half in a pan over a medium heat

2. Mix in equal parts of sugar until dissolved

3. Allow to cool and bottle

For the Tonka & Chocolate Bitters:

1. Decant 50ml of chocolate bitters into a dasher bottle

2. Brake up and add 1 Tonka Bean

3. Use after 2hrs of infusing

NB: The flavour will get stronger the longer you leave it

Shake all hard with ice cubes and double strain into a coupette glass. Garnish with a grating of Tonka Bean.
